Instructions

1. Make the Bacon Jam

  1. In a large skillet over medium heat, cook the chopped bacon until crispy, about 8–10 minutes. Remove bacon with a slotted spoon and set aside. Drain all but 1 tablespoon of bacon fat from the pan.
  2. Add diced onion to the pan and cook over medium-low heat until soft and caramelized, about 10–12 minutes.
  3. Stir in brown sugar, balsamic vinegar, maple syrup, Worcestershire sauce, and black pepper. Return the bacon to the pan.
  4. Simmer, stirring occasionally, until the mixture is thick and jammy, about 10 minutes. Remove from heat and let cool slightly.

2. Make the Dijonnaise

  1. In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth. Set aside.

3. Prepare the Burgers

  1. Preheat grill or skillet to medium-high heat.
  2. Gently form ground beef into 4 equal patties. Season both sides with salt and pepper.
