Ingredients

  • 1 lb ground chicken
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Middle Eastern spice blend (such as Ras el Hanout or Baharat)
  • Salt and pepper to taste
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup dried apricots, chopped
  • 1/4 cup raisins or sultanas
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
