Ingredients
- 2 large eggs
- 1/4 cup milk
- 1 cup roasted potatoes (store-bought or homemade)
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup cherry tomatoes, halved
- 1/2 cup fresh spinach
- 1/4 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/4 cup Greek yogurt (for topping)
- 2 tablespoons fresh cilantro, chopped (for garnish)
- Hot sauce or salsa (optional)
Instructions
Make the Eggs:
- Crack eggs into a bowl. Add milk, salt, and pepper. Whisk well.
- Heat olive oil in a skillet over medium. Add spinach and cook until wilted, about 1 minute.
- Pour in eggs. Stir gently until just cooked. Take off the heat.
Build the Bowl:
