Mexican Peach Fajitas Recipe
Ingredients
- 2 (15 oz) cans of peach slices, drained
- 1 lb of chicken breast, sliced into thin strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons of olive oil
- 2 tablespoons of fajita seasoning
- 1 tablespoon of lime juice
- 8 flour tortillas
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Sour cream (optional)
- Salsa (optional)
Instructions
- Prepare the Ingredients: Drain the canned peach slices and set aside. Slice the chicken breast, bell peppers, and onion.
- Marinate the Chicken: In a large bowl, combine the chicken strips with olive oil, fajita seasoning, lime juice, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes.
- Grill the Peaches: Preheat a grill or grill pan over medium heat. Grill the peach slices for about 2-3 minutes on each side until they have grill marks and are slightly caramelized. Remove from the grill and set aside.
